Merlin grew up in Devon where he was always fascinated by the agriculture surrounding him.
In 2019, Merlin opened his first solo venture, Osip, in Bruton, which was awarded a Michelin star just over a year later. Embodying his farm-to-table philosophy of cooking and inspired by the ‘tables d’hôte’ of France, Merlin allows the quality of the ingredients available to guide his cooking. Not long after, Merlin opened The Old Pharmacy, a rustic wine bar/bistro just a couple of doors down from Osip on Bruton High Street. Osip celebrates the bounty of the countryside that surrounds the restaurant and shines a light on the produce that Merlin grows himself at Dreamers Farm. His deep respect for the restaurant’s bucolic surroundings is what galvanizes and motivates him, curating menus that reflect the rhythm of nature and the seasonality of the ingredients that he harvests himself.
